Recipe: Healthy Maple Peach Cobbler

Warm fruit desserts scream cozy and comfort! This healthier take on a classic peach cobbler is sweetened with pure maple syrup, made with wholesome flours, and topped with a soft, golden biscuit-style topping that bakes into the bubbling fruit below. It's the perfect family weekend baking dish and delicious on its own or served with a dollop of plant-based yogurt or vanilla coconut ice cream, it's simple enough to make with little helpers in the kitchen and a lovely way to celebrate fresh seasonal fruit.

Ingredients

Peach Filling

  • 6 ripe peaches, sliced (fresh or thawed frozen)

  • 2 tablespoons pure maple syrup

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • 1 tablespoon arrowroot starch (or cornflour)

Cobbler Topping

  • 1 cup oat flour

  • 1 cup almond flour

  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • Pinch of sea salt

  • ¼ cup pure maple syrup

  • ⅓ cup unsweetened almond milk

  • ¼ cup melted coconut oil

  • 1 teaspoon vanilla extract

Optional Topping

  • 2 tablespoons finely chopped pecans

  • A light sprinkle of cinnamon

Method

  1. Preheat the oven to 180°C / 350°F and lightly grease a medium baking dish.

  2. In a large bowl, combine the sliced peaches with the maple syrup, lemon juice, vanilla, cinnamon and arrowroot starch. Toss gently until the peaches are evenly coated, then spread the mixture into the prepared baking dish.

  3. In a separate bowl, whisk together the oat flour, almond flour, baking powder, cinnamon and sea salt.

  4. Add the maple syrup, almond milk, melted coconut oil and vanilla, stirring until a thick batter forms. It should be soft enough to spoon but not runny.

  5. Spoon generous dollops of batter over the peaches, leaving a few small gaps so the bubbling fruit can peek through as it bakes. Sprinkle over the chopped pecans and a little extra cinnamon if using.

  6. Bake for 35 to 40 minutes, or until the topping is beautifully golden and the peach filling is bubbling around the edges.

  7. Leave to cool for 10 to 15 minutes before serving. The filling will thicken slightly as it cools.

Tips

  • Nectarines also work beautifully in place of peaches.

  • Add a handful of blueberries or raspberries for extra colour and flavour.

  • Store leftovers in the refrigerator for up to 3 days and gently reheat before serving.

  • This cobbler is delicious warm with unsweetened coconut yogurt or a scoop of dairy-free vanilla ice cream.
