Ingredients
For the cookies:
2 ½ cups all-purpose flour (or wholemeal flour for extra fiber)
1 tsp baking powder
½ tsp baking soda

¾ cup coconut sugar or brown sugar
¼ cup maple syrup or honey
1 egg (or flax egg for plant-based: 1 tbsp flaxseed meal + 3 tbsp water)
1 tsp vanilla extract
For decorating:
Icing sugar + a little water (for simple white icing)
Natural food colorings (orange, green, purple, black)
Chocolate chips, raisins, pretzel sticks, sprinkles, or coconut flakes for details
Instructions
Preheat and prepare:
Heat the oven to 180°C (350°F) and line two baking trays with baking paper.
Mix dry ingredients:
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
Cream the butter and sugar:
In a large bowl, beat butter and sugar until light and fluffy. Add maple syrup, egg, and vanilla. Mix well.
Combine:
Add the dry ingredients to the wet mixture a little at a time until a soft dough forms. If it’s too sticky, chill it for 15–20 minutes.
Shape your cookies:
Roll out the dough on a floured surface to about ½ cm thick. Use Halloween cookie cutters (or cut out shapes with a knife). Ghosts, pumpkins, bats, cats; let the kids decide!
Bake:
Place cookies on trays and bake for 8–10 minutes or until just golden around the edges. Let cool completely before decorating.
Decorate:
