Ingredients
2 slices good quality sourdough or wholegrain bread
1 - 2 ripe avocados depending on size
½ cup cooked white beans (cannellini or butter beans), rinsed and drained
1–2 teaspoons extra virgin olive oil, plus extra to drizzle
A squeeze of fresh lemon juice
Pinch of sea salt

Optional toppings: soft herbs, hemp seeds, finely sliced cucumber or cherry tomatoes


Method
- Toast the bread until warm and lightly golden.
- In a small bowl, gently smash the avocado and white beans together with the olive oil, lemon juice and sea salt, keeping the texture slightly chunky.
