Recipe: Nutty Fruit Loaf by Liv Bates

The lovely Liv from Nourishing Bubs has created this Nutty Fruit Loaf recipe just us and we’re so excited to share it with you! We can report that it is in fact a hit across the board from the adults to the littlest littles!

Liv says; I love it because it has quinoa which is particularly great for those following a vegan diet as it contains all the essential amino acids plus the good fats from nuts and only a small amount of unrefined sugar in the form of dried fruit and maple syrup. It is perfect for pregnancy or postpartum breastfeeding mummies who need an energy hit.

Ingredients

2 cups quinoa flakes

1 cup almond meal

1 cup almond milk

½ cup raw fruit and nut mix chopped (plus extra nuts / seeds for sprinkling) 

½ cup shredded coconut

½ cup cranberries (or other dried fruit)

2 eggs or 2 Chia eggs (For each egg mix 1 tbsp chia with 3 tbsp water, stir and allow to sit for 5-10 mins until gelatinous)

2 tsp baking powder

½ cup organic pure maple syrup

1 tsp cinnamon

1 tsp vanilla extract


Method

  1. Preheat oven to 170ºC. Grease regular loaf tin and line with baking paper.

  2. Combine dry ingredients.

  3. Combine chia eggs, almond milk, vanilla and maple syrup and add to dry ingredients. Stir until combined.

  4. Pour mixture into tin and sprinkle with slivered almonds or nuts and seeds.

  5. Bake for 1 hour in middle shelf, or until skewer comes out clean. Allow loaf to cool in tin.

  6. Slice into ten slices. Individual slices can be frozen.
