Recipe: Healthy Deviled Potatoes by Jennah Jensen

These simple to make deviled potatoes are the healthy alternative to deviled eggs. Although deviled eggs are delicious they do contain a fair bit of cholesterol and are made with not so healthy mayonnaise. Potatoes on the other hand are rich in vitamins, minerals and antioxidants and make for a similarly pleasing experience! Instead of mayonnaise I use hummus for an all around healthier option! Perfect for Easter gatherings or snack time!

       Ingredients

  • 20 mini potatoes (bite sized)

  • 1/2 cup hummus

  • 1 teaspoon seasoning salt (I’m using Johnny’s Seasoning Salt - No MSG version.)

  • drizzle of mustard to taste

  • optional garnish - paprika, dill, parsley

       Method

  • Cut the mini potatoes in half and using a lined baking tray bake at 350F for about 25 minutes.

  • Scoop out the center of the potatoes into a mixing bowl, leaving a small rim for structure.

  • Mix the scooped potatoes with hummus, seasoning salt and mustard until well combined. You may want to add more hummus and seasoning depending on how big your potatoes are or how many you have. Potatoes tend to vary in quantity and size from brand to brand and even from bag to bag so don’t be afraid to tailor the mixture to your taste and needs!

  • Lastly assemble your potatoes onto a serving platter and garnish if desired!
