Recipe: Falafel Wraps with Hummus & Crunchy Veg

Ingredients
8 small or 4 large soft wraps (wholemeal, grain or gluten-free)
12–16 falafels (store-bought or homemade)
1 cup hummus (plain or flavoured – beetroot, roast garlic, etc.)
1 cup shredded lettuce or baby spinach
1 cucumber, thinly sliced
1–2 tomatoes, sliced or chopped

Optional add-ins: grated carrot, avocado slices, pickled red onion, dairy-free tzatziki, fresh mint



Method
Warm the wraps in a dry pan or sandwich press until soft and pliable.
Heat the falafels according to package instructions: in the oven, air fryer, or pan-fried until golden.
Lay everything out buffet-style for the family to build their own wraps, or pre-assemble if preferred.
Spread hummus onto each wrap.
Top with greens, cucumber, tomato, onion, and any optional extras.
Add the warm falafels, roll up the wrap, and serve.
