Recipe: Bunny Pancakes for Easter
Easter morning is one of those days where it feels nice to do something a little different, even if it is just in a small way. Nothing complicated, just something that makes children pause, smile, and feel like the day is a bit special from the very beginning. These bunny pancakes are an easy way to bring that feeling into your morning.
Ingredients
1 cup plain flour (or oat flour for a wholefood option)
1 teaspoon baking powder
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 cup plant milk of choice
1 tablespoon melted coconut oil
For decorating
Banana slices
Blueberries
Thin apple slices or pear for whiskers
Optional: raisins or cacao nibs for details
Method
- In a mixing bowl, combine the flour and baking powder. In a separate bowl, whisk together the plant milk, maple syrup, vanilla, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and stir gently until a smooth batter forms. Allow it to sit for a few minutes while you heat a non stick pan over low to medium heat.
- To create the bunny shape, pour the batter into the pan in different sizes. One larger circle for the head, a slightly smaller one for the body, two oval shapes for the ears, and two small circles for the feet. Keep the heat gentle so the pancakes cook evenly without browning too quickly.
- Cook each pancake until small bubbles appear on the surface, then flip and cook the other side until lightly golden. Remove and set aside.
Assembling the bunny
- Place the largest pancake in the centre as the face, with the body just below. Position the ear shapes at the top, and the smaller circles at the bottom for the feet.
- Use banana slices to create the cheeks or base of the face, blueberries for the eyes, and thin apple slices for whiskers. Small pieces of dried fruit or cacao nibs can be used to add simple facial details.
- There is no need for precision here. Let the arrangement feel relaxed and a little imperfect, which is often what makes it feel more real and more enjoyable.
To serve
Serve warm with a drizzle of maple syrup or a spoonful of yogurt if desired. These pancakes are soft, naturally sweet, and easy for little hands to enjoy.
