Recipe: Berry Crumble Bars

These berry crumble bars are a simple weekend treat to get the kids in the kitchen and the kind of recipe that suits that slow weekend pace. Ingredients

For the base and crumble
1 ½ cups rolled oats
1 cup plain flour or oat flour
⅓ cup coconut sugar or maple sugar
1 teaspoon baking powder
Pinch of salt

⅓ cup coconut oil, melted
¼ cup maple syrup
1 teaspoon vanilla extract

For the berry layer
1 ½ cups mixed berries (fresh or frozen)
2 tablespoons maple syrup
1 tablespoon chia seeds
1 teaspoon lemon juice


Method
- Preheat the oven to 180°C and line a square baking dish with baking paper.

- To make the berry layer, place the berries, maple syrup, and lemon juice into a small saucepan over medium heat. Allow them to soften and break down, stirring gently. Once the mixture begins to thicken slightly, stir through the chia seeds and remove from heat. Set aside to cool while it continues to thicken into a jam like consistency.

- In a large bowl, combine the oats, flour, coconut sugar, baking powder, and salt. Add the melted coconut oil, maple syrup, and vanilla, then mix until the mixture becomes crumbly but holds together when pressed.

- Press about two thirds of the mixture firmly into the base of the lined baking dish, creating an even layer.

- Spoon the berry mixture over the base, spreading it gently across the surface.

- Sprinkle the remaining crumble mixture over the top, leaving it slightly uneven so it bakes into that textured, golden finish.

- Bake for 25 to 30 minutes, until the top is lightly golden and the edges are set.

- Allow to cool completely before slicing into bars, as this helps them hold their shape.


To serve
Cut into squares or bars and serve as they are, or with a spoonful of yogurt on the side. These store well in the fridge and can be enjoyed cold or gently warmed.
