Socially Distanced Egg Hash Recipe by Sarah Olsen


I went to a local farm this morning for fresh eggs, kale and veggies and decided to make this yummy combination for dinner.  If you have a local farm you can support during the this time of social distancing it will keep you away from the grocery store, support a small business who is probably struggling and you can limit your interaction with others and possibly even pick your own fruits and veggies. It will also give you a breath of fresh air outdoors.

We are just finishing up our 8th week of social distancing and we spent the day in Malibu outside In the rain exploring the woods and playing in puddles.  Esmé found a snail and we followed a stream down a path until Wyatt got stuck in the mud. The kids loved exploring and hearing the rain on their hoods. We live near the ocean in a very wide open area with paths to the beach, so it’s easy to stay away from others here. 

When everyone was a bit chilly and ready for a snack we came home, took a warm shower and I started prepping dinner. Sautéed kale, red Peppers, onions, zucchini, and potatoes along with fresh eggs from the farm made for the most delicious meal.  Fresh farm eggs just taste different than eggs from the store. This is because by the time you eat eggs from the store they have been weeks to months in transit to get to you. Eggs from a farm are also all different sizes and colors because they come from a few different chickens. 

I decided to make red pepper (cause I had one) zucchini (cause it’s an easy veggie to throw into anything and takes on the flavor around it) and onion. I cooked the potatoes on their own with a bit of onions salt and pepper because they take longer to cook and I like for them to get a bit crispy.  I sautéed the kale on its own too with avocado oil salt and pepper. When all the veggies were finished I combined the potatoes, onions, zucchini and red pepper. I put the kale on the side and I lay two over medium fried eggs on top of the veggies.
