Recipe: Oat and Date Brownies

Ingredients
1 cup pitted dates
1 cup rolled oats
½ cup plant milk of choice
¼ cup cocoa powder
¼ cup nut butter such as almond or peanut
2 tablespoons maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch of salt
Optional: ¼ cup dark chocolate chips


Method

Preheat the oven to 180°C and line a small baking dish with baking paper.

Place the dates in a bowl and cover with warm water. Allow them to soften for about 10 minutes, then drain well.

In a food processor or blender, combine the oats and blend until they form a coarse flour. Add the softened dates, plant milk, cocoa powder, nut butter, maple syrup, vanilla, baking powder, and salt.

Blend until the mixture becomes smooth and thick, scraping down the sides as needed. If using chocolate chips, fold them through gently at the end.

Transfer the mixture into the prepared baking dish and smooth the top evenly.

Bake for 18 to 22 minutes, until set but still soft in the centre. Allow to cool before slicing into squares.


To serve

These brownies can be enjoyed on their own, or served with a spoonful of coconut yogurt or fresh berries for a more complete snack. They store well in the fridge for several days and can be gently warmed if you prefer a softer texture.
