Recipe: No-Bake Date & Oat Energy Bites

Soft, lightly spiced, and naturally sweet, they come together quickly and use whole ingredients that feel gentle on the body. Ingredients
1 cup rolled oats
¾ cup soft Medjool dates, pitted
¼ cup almond butter or cashew butter
2 tablespoons ground flaxseed
1 tablespoon chia seeds
1 teaspoon cinnamon
½ teaspoon vanilla extract
Pinch of sea salt
1 to 2 tablespoons warm water or plant milk, as needed
Optional additions (choose one to keep it simple):
Finely grated orange zest
Desiccated coconut
Hemp seeds
Method
Add the dates to a food processor and pulse until they form a soft paste.
Add the oats, nut butter, flaxseed, chia seeds, cinnamon, vanilla, and salt.
Pulse until the mixture starts to come together.
Add warm water or plant milk a tablespoon at a time until the mixture is soft and rollable, but not sticky.
Roll into small bite-sized balls using lightly damp hands.
Place in the fridge for 20 minutes to firm slightly before serving.
