Recipe: Frozen Chocolate Banana Bites

You know those recipes that become classic family favourites not because they are elaborate, but because they are easy enough to make on an ordinary afternoon and delicious enough that everyone gets excited when they appear in the freezer. Enter: these frozen chocolate banana bites which fall firmly into that category.

Made with just a handful of simple ingredients, they combine the natural sweetness of banana with a creamy layer of a nut butter of choice and a crisp chocolate coating. They feel like a special treat, yet come together in minutes and can be kept in the freezer for whenever a snack, lunchbox addition, or after dinner treat is needed. It's a great recipe to encourage help from the kids too; from spreading the nut butter to dipping the banana sandwiches into chocolate. The result is a bite sized treat that feels indulgent while still being made from wholesome, plant based ingredients.

Ingredients
2 ripe bananas
¼ cup peanut butter, almond butter, or sunflower seed butter (or any nut/seed butter of choice)
1 cup dark chocolate, melted
1 teaspoon coconut oil
Optional pinch of sea salt


Method

  • Line a tray or plate that will fit into your freezer with baking paper.

  • Slice the bananas into rounds approximately 1 to 1.5 cm thick.

  • Spread a small amount of nut butter onto half of the banana slices, then place another banana slice on top to create little sandwiches.

  • Place the banana sandwiches onto the prepared tray and freeze for 30 to 45 minutes, or until firm.

  • Once frozen, melt the chocolate and coconut oil together until smooth.

  • Using a fork, dip each banana sandwich into the melted chocolate, ensuring it is completely coated. Allow any excess chocolate to drip off before returning it to the lined tray.

  • If desired, sprinkle with a tiny pinch of sea salt while the chocolate is still wet.

  • Return to the freezer for another 20 to 30 minutes, or until the chocolate has completely set.


To Serve
Serve straight from the freezer for a cool, refreshing treat. The banana becomes soft and creamy while the chocolate coating stays crisp, creating a delicious contrast in texture.
Store in an airtight container in the freezer for up to two months.
