Recipe: Creamy Cauliflower Alfredo Sauce by Jennah Jensen

This Creamy Cauliflower Alfredo Sauce is a great recipe to have in your rotation! Whether your family is plant-based, lactose intolerant or is simply wanting to get more veggies in, this recipe is a win!

The sauce is made up of primarily cauliflower and cashews providing a nutritious base that is similar to traditional Alfredo Sauce. Cauliflower is a cruciferous vegetable that is rich in many vitamins, minerals and fiber. Cashews are also an abundant source of essential minerals such as potassium, magnesium and iron to name only a few! In addition, cashews are an amazing source of protein and healthy fats that are integral for muscle and tissue health along with brain development and cognition. This sauce is of course, tasty served over pasta but it’s also delicious used as dipping sauce for steamed vegetables like broccoli, as a pizza base or anywhere you see fit for a creamy, cheesy pop of flavor!

        Ingredients

  • 3 loosely packed cups cauliflower florets (I recommend fresh cauliflower over bagged as fresh has better flavor.)

  • 1 cup hot water, reserved from boiling cauliflower

  • 1 cup raw, unsalted cashews

  • 1/2 cup nutritional yeast

  • 2 teaspoons Better Than Bouillon Vegetable Paste or about 2 veg. bouillon cubes

  • 1.5 teaspoons garlic powder

  • 1.5 teaspoons onion powder

  • 1.5 teaspoons seasoning salt (I’m using Johnny’s Seasoning Salt - No MSG version.)

  • 1/2 teaspoon black pepper

Pair with fettuccine noodles/pasta of choice or use as a dipping sauce for vegetables, buddha bowls, etc.

        Method

  • Boil cauliflower, reserving 1 cup of the boiled water.

  • Once the cauliflower is thoroughly cooked and is fork tender, add it along with the cup of boiling water and all other ingredients to a high speed blender. If you suspect your blender will have a hard time, leave the hot water to soak the ingredients for about 20 minutes before blending.

  • Blend thoroughly, stopping to scrape and stir occasionally if needed.
